This fabulous Irish Soda Bread recipe is delicious and quick and easy to make.
SERVES: 8
PREP TIME: 15 Minutes
COOK TIME: 40 Minutes
Ingredients

2 cups all-purpose flour, sifted
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
1/4 cup shortening
1/2 to 1 cup raisins
2 tsp. caraway seeds
1 whole egg, beaten
2/3 cup buttermilk

Directions
Step 1  Step 1::
Preheat oven to 375 degrees.
 
Step 2  Step 2::
Sift together in a large bowl; 2 cups sifted all-purpose flour, baking powder, baking soda, salt and sugar.
 
Step 3  Step 3::
Cut 1/4 cup chilled shortening into the flour with a pastry blender until the mixture has the consistency of coarse cornmeal. (Can also use a food processor or two knifes)
 
Step 4  Step 4::
Stir in 1 raisins, caraway seeds and mix together with beaten egg. Add buttermilk.
 
Step 5  Step 5::
Add to dry ingredients and stir well. Knead briefly and place in a greased 8-inch round pan. Press down so dough will fill the pan. Cut a bold cross over the top and sides so the bread will not crack in baking. Brush the top with milk.
 
Step 6  Step 6::
Bake 35 to 40 minutes. Serve hot with butter if desired.
